Why I swear by my immersion blender

I’ve been using an immersion blender for the past few years, and I can’t imagine my prep without it. It’s not just for soups; I use it for sauces and even smoothies, saving a ton of time in cleanup compared to a traditional blender. But i totally agree on the versatility of the immersion blender. I love using mine for homemade pesto — just toss everything in a bowl and blend away. But I’ve found it’s a bit tricky with thicker mixtures; sometimes I use a little extra oil to get everything moving. What’s your favorite dish to make with yours?
