Which short courses actually level you up

I’m in culinary school and doubling down on extra learning and networking this fall — looking at a 6-week bread intensive at City College and a two-day HACCP refresher — have any of you taken short courses that genuinely leveled up your skills or opened doors? My mini-hack is to introduce myself to the instructor right after class; those 3-minute chats already led to two shadow days at a hotel bakery.
