Essential knife skills for sushi preparation

I’ve been honing my knife skills for sushi, and I’m constantly reminded how crucial proper technique is. For instance, using a well-balanced deba knife makes all the difference in slicing fish cleanly. I’m curious to hear what tools or methods others find indispensable in their sushi preparation.

But i totally agree about the deba knife! One time, I thought I could get by with a regular chef’s knife — let’s just say the fish didn’t appreciate my creativity. Have you tried using a yanagiba too? It really helps with those clean cuts.

And absolutely! I remember when I first tried using a yanagiba for slicing sushi; the difference was night and day. It’s all about that long, precise cut — like a sushi samurai in action! Have you ever experimented with using a tojiro knife for your rolls?
