I’ve had good variance control with a probe-driven delta‑T for birds and shoulders: cavity 140°C with delta‑T 30°C, fan low, 60% RH to 68°C core, then auto‑step to 210°C/10% RH for 6 minutes with a 90‑second “vent blast” before opening — cruise control, not a drag race. Do you vary fan speed between steps on the Saturday push, or keep it fixed to protect delicate items? If color runs too fast, cap the finish at 195°C or cut the dry step to 3–4 minutes.

@OP I get consistent birds with a short dry blast to set skin, then gentle moist cook, then a dehumidify finish: 2 min at 230°C/0% RH fan high, then 165°C/50% RH fan low to 68°C core, finish 3 min at 210°C/0% RH with the vent open, then auto-hold at 70°C/70% RH to equalize. If the load is mixed weights, I back the first step down to 200°C to prevent “blistering”.
