Best short courses to level up this winter

I’m stoked to level up between terms and am hunting for a 2–3 day workshop I can squeeze in Jan 12–14 in the Northeast that truly builds skills and connections… If you’ve done a short course (fermentation, butchery, lamination, HACCP) that turned into real contacts or a stage, what would you recommend? My quick tip from school: show up early, help with setup, and trade cards right after Q&A — those five minutes have already landed me two shadow shifts.

King Arthur Baking School in Norwich, VT is your best bet for a 2–3 day lamination blast; I did their Laminated Dough Intensive and made two solid contacts — ask the instructor to seat you with working bakery folks and follow up that night for a stage. The only snag: these fill up fast, , so hop on the waitlist and email the class coordinator about intros. Check their calendar for “Jan 12–14”: https://www.kingarthurbaking.com/classes — does that window line up?

CIA Hyde Park 2-day Butchery Boot Camp fits Jan 12–14; ask for a post-class kitchen tour for stage: https://www.ciachef.edu/boot-camp/.

I turned a weekend HACCP course into a stage by emailing the instructor a week ahead with a one-line goal and offering to ‘show up early’ to help set up and break down. For that mid-month Northeast window, do the same and ask if you can shadow their prep after day two — most instructors say yes if you’re useful. Winter can snarl travel, so confirm a weather plan in that email.
