Balancing upskilling and outreach as a commis

Last night on garnish at 9:40 p.m., I over-reduced the jus twice and got bounced to prep, so I wrote a week plan: 15-minute knife drills before lineup, 3x emulsions after service, then send two thoughtful DMs to chefs I admire with one specific ask (trail date or feedback on a mise photo). I batch DMs to one every Monday with a single ask, and only follow up once I’ve got a tangible update (like a cleaner mise photo), which keeps me from feeling needy. Treat the outreach like stock: low and slow, not a rolling boil.
