Balancing R&D with service rush

Anyone else trying to pilot a yuzu–olive oil mousse while tickets hit hard at 7:30? I’m a pastry sous and I’ve been carving out 12-minute blast-chiller sprints between fire times, but I’m looking for smarter ways to protect test batches without slowing service — how are you building innovation windows into prep or plating? If you’ve cracked this, I’ll happily swap my sprint schedule and par sheet tweaks.

I’ve had luck with a “two-ticket rule” and colored-tape R&D trays: pre-scale 3 mini-batches (about 80g) into piping bags, park them in an ice–salt cambro at the pass, and only touch one when pastry is at ≤2 open, then blast and log. If expo won’t buy that, swap for a fixed 6‑minute “pit stop” right after first fire by pre‑plating one dessert to cover — would that fly in your house?

Instead of those “12-minute blast-chiller sprints,” I load a half-filled iSi with the yuzu–olive base, park it in a wine chiller at the pass, and pull 10–15 g hits onto a pre-chilled spoon between fires at 7:30. Are you setting with gelatin or just emulsion? It protects the test batch and keeps service moving, with the caveat that N2O makes it a touch lighter than a regular set.

We carve a 5-minute “yellow light” right after the 7:30 spike: expo flips a clip on the rail, I run only plates plus two tests, and I park pre-cast 20 g silicone buttons in a 1/9 over a frozen eutectic plate at the pass so they’re safe but ready. Piggybacking @hank_meyer81, it’s pit-lane R&D without slowing the line — want the gel-pack model I use or do you already have cold plates?
